Assistant Chief Steward

The Assistant Chief Steward supports the Chief Steward in managing and supervising the stewarding team and operations, ensuring the highest standards of cleanliness, organization, and hygiene across all kitchens, storage areas, and F&B venues. This role also assists in cost control, equipment care, and HACCP compliance while motivating the team to deliver consistent results.

• Assist the Chief Steward in daily operations of stewarding across all outlets, banquets, and kitchens

• Supervise cleaning and sanitation of kitchen equipment, storage areas, and back-of-house spaces

• Support the setup and breakdown of events, ensuring equipment is prepared and handled safely

• Ensure proper stock rotation, organization of stores, and accessibility of stewarding areas

• Take initiative to monitor and improve daily performance of cleaning standards.

• Support inventory management of chemicals, cleaning equipment, and stewarding supplies

Hỗ trợ quản lý tồn kho hóa chất, thiết bị làm sạch và các vật tư liên quan

• Assist in breakage analysis, prevention strategies, and sustainability initiatives

Tham gia phân tích thiệt hại, xây dựng biện pháp phòng ngừa và triển khai các sáng kiến phát triển bền vững

• Monitor consumption and suggest improvements to minimize waste and costs.

Health, Hygiene and Safety

• Apply necessary precautions with regards to hotel food safety and hygiene standards (HACCP)

Áp dụng đầy đủ các biện pháp an toàn thực phẩm và vệ sinh theo tiêu chuẩn của khách sạn (HACCP)

• Be well versed in hotel fire, life safety, and emergency procedures

Nắm vững quy trình PCCC, an toàn tính mạng và ứng phó khẩn cấp của khách sạn

• Report and take appropriate action to correct any health or safety hazards

Báo cáo và xử lý kịp thời các nguy cơ về sức khỏe hoặc an toàn

• Liaise with Engineering regarding maintenance and repairs of equipment

Phối hợp với bộ phận Kỹ thuật về việc bảo trì và sửa chữa thiết bị

• Instruct staff on emergency measures in case of accidents and ensure the first aid kit is stocked and available in kitchens in collaboration with the hotel’s clinic

Hướng dẫn nhân viên các biện pháp ứng phó trong trường hợp tai nạn và đảm bảo túi sơ cứu luôn đầy đủ tại các khu vực bếp (phối hợp với phòng y tế khách sạn)

• Ensure all work areas in the kitchen are kept tidy and clean

• Conduct regular hygiene audits, safety training, and emergency preparedness exercises

• Lead safe handling and storage of chemicals and cleaning products, ensuring proper labeling and usage.
