An Assistant Director of Food and Beverage works with the Director of Food and Beverage in a restaurant or hotel dining room.
The person is responsible for carrying out various duties to ensure that customers receive excellent service by providing the best food and drinks.
The Assistant is responsible for maintaining profits from food and drink sales, having excellent communication and customer service skills, maintaining a clean environment and making effective decisions when needed.
Always following government regulations concerning health, safety or other requirements.
This is the Assistant Director of Food and Beverage job in a Luxury Resort of 459 rooms including 115 condotel rooms and 5 villas, 09 F&B outlets, 06 convention facilities, 04 swimming pools. Supervises 150-200 employees in multiple food and beverage outlets and banquet and convention facilities. Oversees outlets manager and supervisors.
YOUR DAY-TO-DAY
People
- Direct/Manage everyday activity, plan and assign work ensuring you always have the right staffing numbers
- Develop your team and improve their performance through coaching and feedback, and create performance and development goals for colleagues
- Train colleagues to make sure they deliver with compliance and to the standards we expect
- Drive a great working environment for teams to thrive - linking up departments to create sense of one team
- Promote teamwork and quality service through daily communication and coordination with other departments
- Recommend or initiate any HR related actions where needed
- Assists in managing the day-to-day operation of the Food and Beverage sections and informs the Director of Food and Beverage or designate, of any major decision taken which did not require his/her action and any other relevant information
- Assumes the duties and responsibilities of the Director of Food and Beverage in his/her absence Train colleagues to make sure they deliver with compliance and to the standards we expect
- Conducts daily briefings, Food and Beverage Meetings and other meetings as needed to obtain optimal results
- Attends and participates to other meetings as required by the administrative calendar
- Assists Director in keeping an up-dated Hotel Policies and Procedures file and up-dated files on all Food and Beverage matters
- Employee satisfaction survey.
- Help create the department’s annual budget and the setting of departmental goals
- Monitor budget and control expenses with a focus on food, beverage, and labour costs….
- Assists Director in setting Food and Beverage goals and developing strategies, procedures and policies
- Assists Director in determining the minimum and maximum stocks of all food, beverage, material and equipment
- Assists Director in settings standards of all food, Beverage and equipment purchases in accordance with IHG guidelines
- Participates in the preparation of the hotel's revenue plan and marketing programs
Guest Experience
- Assists Director in developing popular menus and beverage lists offering guests value for money in accordance with IHG guidelines. Make sure all food and beverage facilities including banquet/convention spaces are clean and properly stocked to anticipated business volume. Notify engineering immediately of any maintenance and repair needs.
- Controls and analyzes, on an on-going basis, the following:
- Costs
- Quality and presentation of food and beverage products
- Service standard
- Condition and cleanliness of facilities and equipment
- Quality of entertainment
- Guest satisfaction
- Marketing
Responsible Business
- Assists Director in planning and organizing successful Food and Beverage activities in the hotel and overseas
- Monitors local competitors and compare their operation with the hotel Food and Beverage operation
- Maintains knowledge of trends, systems, practices and equipment in food and beverage through trade literature, hotel show and site visits
- Be responsible in keeping our property safe and secure, to participate in any hotel activity related to Fire Life safety.
- Performs related duties and special projects as assigned.
- Other ad-hoc duties – unexpected moments when we have to pull together to get a task done
- May also serve as manager on duty (MOD) on request.
- May assist with other duties as assigned by management
Yêu Cầu Công Việc
- Education: Bachelor’s degree / higher education qualification / equivalent in Hotel Management, culinary arts, or related field
- Service years in the field: 3 years related experience, including supervisory experience, or an equivalent combination of education and experience
- Knowledge and skills:
- Demonstrated ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company.
- Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local government agency.
- Problem solving, reasoning, motivating, organizational and training abilities.
- Good writing skills

- Having knowledge about food safety and hygiene
