The Role
- To supervise the daily bar operation and ensure efficient, professional and courteous service at all times.
- To lead the bar team by example, maintaining high standards of service, grooming, discipline and product knowledge.
- To assist the Assistant Bar Manager and Bar Manager in managing the team and coordinating daily operational activities.
- To ensure effective communication and strong cooperation between the Bar, Kitchen, Stewarding, Cashier and other departments.
- To create a positive working environment and motivate team members to achieve departmental goals.
- To build strong relationships with guests, anticipate their needs and ensure a memorable bar experience.
- To handle guest feedback and complaints professionally, taking immediate corrective action when appropriate.
- To promote beverage products, signature cocktails and ongoing promotions to maximize guest satisfaction and revenue.
- To ensure all hotel policies, operational standards, hygiene, health and safety procedures are consistently followed.
Key Deliverables and Responsibilities
Planning & Organizing:
- Supervise the preparation of all bar mise-en-place and ensure the bar is ready before opening.
- Allocate daily duties and workstations to Bartenders and Bar Attendants.
- Conduct pre-shift briefings and communicate operational updates, promotions, VIP guests and special requests.
- Assist in preparing duty rosters according to operational requirements.
- Monitor opening and closing procedures, including bar par stock, equipment and handover records.
- Participate in weekly and monthly beverage, alcohol and liquor inventories.
- Prepare and verify store requisitions, bar requisitions and stock transfers.
- Monitor stock levels and ensure sufficient beverage supplies are available for daily operations.
- Work with the Outlet Manager and Bar Manager to develop themed events, beverage promotions and incentive programmes.
- Assist in controlling beverage costs, wastage, breakage, spoilage and stock variances.
- Support the development and implementation of new cocktails and beverage presentations.
- Ensure all bar menus, price lists and promotional materials are accurate and properly displayed.
Operations:
- Supervise the daily operation of the bar and ensure smooth, efficient and consistent service during each shift.
- Lead and coordinate Bartenders and Bar Attendants according to the outlet’s duty schedule and business requirements.
- Ensure all team members follow established service sequences, beverage recipes, portion standards and presentation guidelines.
- Conduct regular training sessions on cocktail preparation, pouring techniques, beverage knowledge, bottle handling, upselling and guest engagement.
- Observe and correct pouring practices to maintain product consistency and minimize excessive wastage.
- Ensure beverage orders are prepared and issued only against authorized written or printed orders.
- Check the grooming, uniform condition, punctuality and professional conduct of all bar team members.
- Ensure the timely setup and closing of all bar areas, including the completion of mise-en-place, cleaning and stock replenishment.
- Welcome guests, assist with beverage recommendations and ensure prompt, personalized and attentive service.
- Maintain a professional, friendly and discreet relationship with guests while anticipating their preferences and needs.
- Promote signature cocktails, premium beverages and current promotions to increase revenue and enhance the guest experience.
- Ensure the cleanliness, organization and proper maintenance of the bar counter, equipment, glassware and surrounding areas.
- Monitor the quality, presentation, temperature and consistency of all beverages served.
- Handle guest complaints and operational issues promptly, escalating serious matters to the Assistant Bar Manager or Bar Manager.
- Conduct shift briefings and ensure clear communication, follow-up and proper handover between shifts.
- Maintain comprehensive knowledge of the beverage menu, ingredients, prices, promotions and unavailable items.
- Support cashiering operations and ensure all payments, discounts, voids and transactions are handled accurately.
- Monitor bar stock, transfers, breakages, wastage and lost items, ensuring all records are accurately completed.
- Coordinate closely with Kitchen, Stewarding, Cashier and other operational departments to ensure efficient service.
- Ensure compliance with Mövenpick Hotels & Resorts policies relating to Fire, Hygiene, Health, Safety and responsible alcohol service.
- Be familiar with all relevant company documentation and the Operational Standards Manual for the department.
- Provide performance feedback, coaching and on-the-job guidance to bar team members.
- Report equipment defects, stock discrepancies, guest incidents and team performance concerns to the relevant manager.
- Assume responsibility for the bar operation during the absence of the Assistant Bar Manager, as assigned.
- Carry out any other reasonable duties and responsibilities assigned by the Assistant Bar Manager, Bar Manager or Outlet Manager.
Yêu Cầu Công Việc
- Minimum 2–3 years of experience in bar or Food & Beverage operations, preferably in a Bartender Captain or supervisory role within hotels or upscale restaurants.
- Strong knowledge of cocktails, spirits, bar operations, service standards, hygiene, health and safety regulations, stock control and beverage cost control.
- Good leadership and team supervision skills, with the ability to support staff training, shift allocation and daily bar operations.
- Guest-oriented mindset with good communication and upselling skills; able to handle guest requests, complaints and operational issues professionally.
- Good command of English; professional appearance, positive attitude and flexibility to work shifts, weekends and public holidays are required.
