POSITION SUMMARY
Organize kitchen operations and prepares and serves a range of Indian dishes, whilst supervising junior members of the Kitchen Brigade. o Restaurant/Event Room Operations - Knowledge of procedures for managing restaurant room set-up, management of host/hostess station, maintenance of fine silver, setting tables, break down of room, management of coat check, management of staff/associates, creation of checklists, audits, LSOPs, and maintenance of a high quality dining environment (music, lighting, temperature), as well as opening and closing.
o Basic Competencies - Fundamental competencies required for accomplishing basic work activities.
o Basic Computer Skills - Uses basic computer hardware and software (e.g., personal computers, word processing software, Internet browsers, etc.).
o Mathematical Reasoning - Demonstrates ability to add, subtract, multiply, or divide quickly, correctly, and in a way that allows one to solve work-related issues.
o Oral Comprehension - Demonstrates ability to listen to and understand information and ideas presented through spoken words and sentences.
Room service là hình thức phục vụ ẩm thực tại phòng cho khách lưu trú. Khi khách yêu cầu, thức ăn sẽ được vận chuyển bằng xe đẩy/khay lên phòng.
Thực Đơn Có Trong Room Service
Phần lớn room service sử dụng một loại thực đơn cố định là à la carte và một loại thực đơn chuyên dùng cho ăn sáng (doorknob menu). Khách hàng có thể yêu cầu món ăn, thức uống qua điện thoại trong phòng khách.
Chuẩn Bị
Luôn có sẵn bản sao thực đơn, bút, phiếu ghi yêu cầu và danh mục các phòng khách (nếu cần).
Tiếp Nhận Thông Tin
Nhấc điện thoại sau ba hồi chuông, chào khách bằng tên khách, xưng danh bộ phận.
Ghi lại thời gian của cuộc gọi, số phòng, yêu cầu của khách và gợi ý thêm món khác cho khách nếu phù hợp
Nhắc lại, bổ sung hoặc xin thêm thông tin từ khách nếu cần thiết.
Cảm ơn khách đã gọi món, thông báo thời gian chuẩn bị món và mang đến phòng, ghi lại vào cuối phiếu yêu cầu.
Chuyển yêu cầu đến bếp.
Phục Vụ Tại Phòng
Để các đĩa thức ăn lên khay phục vụ hoặc xe đẩy, đảm bảo nhiệt độ phục vụ.
Chuẩn bị hóa đơn, đầy đủ món ăn, dao nĩa, gia vị, khăn ăn, hoa (nếu thích hợp)…
Gõ cửa, Mỉm cười, chào khách.
Bê hoặc đẩy các món ăn vào phòng, tìm vị trí phù hợp (không đặt lên giường hoặc sàn nhà).
Lấy nắp đậy ra để khách xem món và xác nhận từng món ăn.
Thanh Toán
Đưa hóa đơn cho khách ký nhận nếu tất cả món ăn đúng yêu cầu.
Tất cả hóa đơn phải được ký và không được nhận tiền mặt.
Xác Định Thời Gian Dọn
Hỏi khách khoảng thời gian nào là phù hợp để dọn dẹp.
Chúc khách ngon miệng, rời phòng và đóng cửa.
Thu Dọn Tại Phòng
Kiểm tra thời gian, đi đến phòng khách.
Gõ cửa vào phòng khách như khi mang thức ăn đến.
Dọn khay/xe đẩy, mang thẳng ra từ phòng khách.
1. Giám sát chất lượng phục vụ khách hàng
a) Thực hiện các công việc đầu ca:
- Đảm bảo tiêu chuẩn phục vụ của nhà hàng trước khi vào ca: Kiểm tra và đánh giá các tiêu chuẩn phục vụ của nhà hàng; Giám sát quá trình điều chỉnh cho đúng với yêu cầu
- Bố trí phân công công việc cho nhân viên
- Xử lý các báo cáo công việc của Tổ trưởng bàn về cơ sở vật chất, về tác phong, trang phục, hình thức cá nhân của nhân viên
- Trực tiếp hỗ trợ nhân viên thực hiện các công việc đầu ca
- Tham gia họp đầu ca
b) Trong quá trình phục vụ khách hàng:
- Trực tiếp điều khiển toàn bộ hoạt động phục vụ khách hàng trong nhà hàng. Giám sát, nhắc nhở và hướng dẫn đội ngũ nhân viên thực hiện công việc
- Thường xuyên giao tiếp với khách hàng để nắm bắt thị hiếu, tâm lý và khẩu vị của khách
- Trực tiếp giải quyết các khiếu nại, thắc mắc của khách hàng
- Kiểm soát chất lượng món ăn khi ra đồ. Kiểm soát các món ăn theo Menu, đảm bảo phục vụ khách hàng các món ăn theo đúng tiêu chuẩn
- Phối kết hợp thật tốt với các bộ phận khác trong nhà hàng để cùng nâng cao chất lượng dịch vụ của nhà hàng
- Nắm và hiểu rõ các “chương trình khuyến mại” tại nhà hàng và giải thích được cho khách hàng và nhân viên …
- Xử lý các vấn đề phát sinh nằm ngoài khả năng của nhân viên
c) Thực hiện các công việc cuối ca:
- Giám sát nhân viên thực hiện các công việc cuối ca
- Yêu cầu nhân viên thực hiện đóng ca theo đúng tiêu chuẩn của Nhà hàng với các trường hợp chưa đạt hoặc chưa thực hiện
- Lập báo cáo hàng ngày cho Quản lý nhà hàng
- Kiểm tra lại tình trạng của nhà hàng trước khi về và bàn giao lại cho ca sau
2. Đảm bảo chất lượng nhân sự
- Chịu trách nhiệm về chất lượng đội ngũ nhân viên bộ phận phục vụ: chủ động đào tạo nghiệp vụ cho nhân viên, phối hợp với Phòng nhân sự trong công tác tuyển dụng
- Phối hợp với phòng đào tạo trong việc xây dựng kế hoạch đào tạo, nội dung đào tạo và triển khai, đánh giá đào tạo
3. Kiểm soát chi phí, tài sản, công cụ dụng cụ
- Kiểm soát chi phí nhà hàng, tránh tình trạng thất thoát, lãng phí
- Kiểm soát tài sản, trang thiết bị, công cụ dụng cụ. Lên kế hoạch sửa chữa, thay thế cho Quản lý nhà hàng. Thực hiện tốt công tác kiểm kê, bổ sung đồ dùng, dụng cụ cho nhà hàng. Kiểm tra, giám sát, đánh giá hiệu quả công việc và ý thức làm việc của nhân viên
4. Quản lý nhân sự
- Điều động, bố trí, xếp lịch làm việc cho nhân viên bộ phận phục vụ
- Biết cách tính lương và ngày công giờ cho nhân viên và giải thích những thắc mắc nằm trong khả năng của vị trí
- Đánh giá hiệu quả công việc nhân viên bộ phận phục vụ theo tháng; đánh giá nhân viên sau thử việc
- Đề xuất tuyển dụng/ khen thưởng/ kỷ luật/ điều chuyển công tác đối với nhân viên bộ phận bàn
- Giám sát, nhắc nhở việc tuân thủ Nội quy lao động của nhân viên
- Thực hiện các thủ tục hành chính khác theo quy định của công ty
- Tiếp cận khách hàng là các Chủ đầu tư dự án, khai thác thông tin các dự án đầu tư tiềm năng tại thị trường Việt Nam.
- Xử lí thông tin, các yêu cầu của khách hàng; lên kế hoạch phối hợp với các phòng ban liên quan để hoàn thành tốt các yêu cầu của khách hàng
- Chịu trách nhiệm công tác dịch thuật, chuyển đổi tài liệu, ngôn ngữ, hợp đồng có liên quan giữa công ty và đối tác
- Trợ lý về mặt ngôn ngữ trong các cuộc họp, hội thảo, diễn đàn hợp tác giữa công ty và khách hàng
- Là cầu nối truyền tải các yêu cầu của khách hàng, hỗ trợ khiển khai các công việc khi có yêu cầu từ khách hàng
- Tạo dựng và duy trì mối quan hệ mật thiết, các hoạt động chăm sóc khách hàng, giải quyết thắc mắc và khiếu nại của khách hàng khi có yêu cầu
- Thực hiện các công việc được ủy quyền theo sự chỉ đạo của Lãnh đạo.
- Cùng Phụ trách bếp nhà hàng kiểm tra hàng hoá, nguyên vật liệu về số lượng và chất lượng khi hàng về
- Xử lý hàng tồn đọng từ hôm trước
- Kiểm tra hình thức cá nhân và phân công công việc, khu vực làm việc cho nhân viên. Bố trí phân công công việc cho nhân viên
- Trực tiếp hỗ trợ nhân viên thực hiện các công việc đầu ca
- Tham gia họp đầu ca
2. Tổ chức chế biến món ăn trong quá trình phục vụ khách hàng
- Nhận order món
- Phân công công việc cho nhân viên chế biến món ăn theo yêu cầu hoặc trực tiếp chế biến món ăn tuỳ theo từng trường hợp
- Hỗ trợ nhân viên thực hiện công việc kịp thời khi nhân viên gặp khó khăn
- Kiểm tra về số lượng, chất lượng món ăn, đảm bảo món ăn đã được chuẩn bị và chế biến theo đúng quy trình, tiêu chuẩn số lượng, định lượng, chất lượng của Công ty, phù hợp với các yêu cầu về an toàn vệ sinh thực phẩm
- Giải quyết kịp thời các trường hợp trang trí, chia, định lượng thức ăn không theo đúng các tiêu chuẩn và trình tự của Công ty
- Kiểm tra, giám sát quá trình nhân viên làm và chế biến món ăn
- Thường xuyên kiểm tra việc đáp ứng các Order có đúng, đủ, đảm bảo số lượng, chất lượng
- Thường xuyên kiểm tra, kiểm soát số lượng và chất lượng các loại trang thiết bị, CCDC thuộc bộ phận bếp, để xuất sửa chữa, thay thế với Phụ trách bếp nhà hàng
3. Thực hiện các công việc cuối ca
Theo dõi và phân công việc cho nhân viên thực hiện các công việc sau
- Vệ sinh các dụng cụ chế biến và để vào đúng khu vực quy định
- Vệ sinh tủ đựng thực phẩm, sắp xếp thực phẩm, nguyên liệu trong tủ gọn gàng, ngăn nắp, đúng vị trí
- Sắp xếp, bảo quản nguyên vật liệu sau khi hết ca làm việc
- Sắp xếp lại các loại gia vị đúng khu vực
- Kiểm tra hệ thống bếp, đèn, quạt, thông gió và các máy móc, thiết bị khác trước khi nghỉ. Đảm bảo tủ lạnh, tủ mát phải hoạt động tốt và theo đúng nhiệt độ tiêu chuẩn
4. Công tác quản lý
- Thay mặt Phụ trách bếp nhà hàng điều hành, xử lý mọi công việc của bếp khi Phụ trách bếp nhà hàng không có mặt
- Điều động, bố trí, xếp lịch làm việc cho nhân viên bộ phận bếp̣
- Đánh giá hiệu quả công việc nhân viên bộ phận theo tháng; đánh giá nhân viên sau thử việc
- Đề xuất tuyển dụng/ khen thưởng/ kỷ luật/ điều chuyển công tác đối với nhân viên bộ phận
- Điều động nhân viên trong bếp thực hiện công việc được giao
- Cùng Phụ trách bếp nhà hàng huấn luyện tay nghề cho nhân viên
- Kiểm tra, giám sát, đánh giá hiệu quả công việc và ý thức làm việc của nhân viên
- Giám sát việc tuân thủ Nội quy Công ty
- Theo dõi việc sử dụng thực phẩm, bảo đảm sử dụng thực phẩm luân phiên theo nguyên tắc nhập trước, xuất trước
- Quản lý, sử dụng hợp lý, tiết kiệm hàng hoá, thực phẩm, điện, nước, gas...
