As a Teppanyaki CDP, you are responsible for delivering an elevated, guest-facing dining experience while also supporting prep and kitchen operations during off-peak times. You lead technical consistency on the grill, train junior Teppan chefs, and float into prep support or counter setup when not on live duty. This hybrid role requires performance skills, precision cooking, and team leadership.Key Responsibilities
Key Responsibilities
• Perform live Teppanyaki service with storytelling, choreography, and precision.
• Maintain daily mise-en-place for assigned counter(s) including premium proteins and sauces.
• Supervise grill reset and sanitation after each service.
• Train and mentor Teppan chefs and commis on knife skills, grill discipline, and prep timing.
• Float to BOH to support prep or mise tasks during lunch and low-booking periods.
• Participate in HACCP logging, opening/closing routines, and delivery receiving.
Yêu Cầu Công Việc
• Minimum 4+ years in Japanese or Teppanyaki-focused kitchens in a luxury 5-star hotel or fine dining setting.
• Live-cooking experience with high-net-worth or VIP guests is preferred.
• Proficient knife handling, grill technique, and service timing under pressure.
• Language: Fluency in Vietnamese and English required; other Asian languages (Japanese, Korean, Mandarin) are a strong plus.
• HACCP certification preferred.
