The General Manager (GM) is responsible for overseeing all aspects of the high-end Japanese Teppanyaki restaurant, ensuring seamless daily operations, financial performance, and guest satisfaction in a luxury setting. This role requires strategic leadership, operational expertise, and an in-depth understanding of fine dining and Japanese culinary excellence. The GM will manage both FOH and BOH operations, ensuring compliance with HACCP standards, luxury service expectations, and company objectives.
Situated in a gaming environment, the restaurant serves high-demand and discerning VIP gaming members who seek to be entertained, impressed, and leave uniquely satisfied. This is not your typical Japanese fine dining experience, where subtlety and understatement dominate. Instead, the role calls for crafting a vibrant, performance-driven dining experience that blends the precision of Japanese hospitality with bold, memorable moments tailored to this exclusive audience.
Key Responsibilities
1. Strategic Leadership & Business Performance
• Define and implement operational strategies to align with business goals and maximize financial performance (revenue, cost control, and profitability).
• Ensure compliance with company policies, brand standards, and local regulations.
• Develop and execute long-term goals to position the restaurant as the leading high-end Japanese dining destination.
2. Operations & Service Excellence
• Oversee all restaurant operations, ensuring world-class guest experiences and adherence to fine-dining hospitality standards.
• Maintain seamless FOH and BOH workflow while keeping the kitchen concealed.
• Ensure all food preparation meets high standards of authenticity, quality, and consistency in accordance with 5-star international fine dining standards.
• Direct priority supply chain for fresh Japanese-imported ingredients and ensure deliveries align with HACCP standards.
• Supervise staff adherence to hygiene, safety, and compliance regulations.
3. Guest Experience & VIP Relations
• Lead a culture of personalized, exceptional hospitality catering to high-net-worth individuals and VIP guests.
• Act as a brand ambassador, maintaining guest engagement and addressing any concerns professionally.
• Develop a pre-arrival briefing system for tailored guest experiences.
• Ensure flawless execution of beverage pairings, including sake and wine programs.
• Implement service recovery protocols for guest issues and conduct post-dining debriefs to improve service quality.
4. Team Leadership & Development
• Recruit, train, and mentor FOH and BOH staff, fostering a high-performance luxury service culture.
• Conduct joint training programs for chefs and FOH teams for synchronized service.
• Implement pre-service briefings to align kitchen and service teams.
• Develop a real-time communication system (Zalo/Log Book) for seamless coordination.
• Act as a key liaison between FOH and BOH teams to ensure a synchronized, efficient operation.
5. Financial & Supply Chain Management
• Drive revenue growth through strategic pricing, cost control, and expense management.
• Manage budgets, inventory, and supplier relations to optimize operational efficiency and profitability.
• Oversee supply chain management, ensuring high-quality ingredient sourcing and optimal stock levels.
• Monitor financial reports, guest feedback, and operational costs to implement corrective actions when necessary.
6. Marketing & Brand Development
• Support marketing initiatives and promotional events with Let’s Win VIP Clbu marketing team.
• Ensure the VIP room design and customer journey from sake cellar to table reflects exclusivity and luxury.

1. Experience:
• Minimum 10+ years of experience in luxury hospitality or fine dining, preferably with Japanese cuisine expertise.
• Proven leadership experience in managing high-end restaurants, luxury hotels, or integrated resorts.
• Prior experience in a VIP or gaming environment is a plus.
2. Skills:
• Strong leadership and problem-solving abilities.
• In-depth knowledge of Japanese cuisine, fine-dining service standards, and guest expectations.
• Ability to train and develop a multicultural team to achieve excellence in service and operations.
• Financial acumen with experience in budgeting, P&L management, and revenue growth strategies.
• Excellent communication and negotiation skills for vendor management and guest relations.
3. Language Proficiency:
• Fluency in English is mandatory.
• Basic Japanese is highly preferred.
• Vietnamese or other Asian language skills are a plus.
4. Attributes:
• Passionate about high-end hospitality and delivering world-class experiences.
• Detail-oriented with a strong commitment to service excellence and operational efficiency.
• Able to work under pressure, with a flexible and adaptive mindset to handle a dynamic environment.

Preferred Qualities
• Experience working with high-net-worth guests from Korea, Hong Kong, Macau, and Southeast Asia.
• Background in luxury brand management or Michelin-starred restaurants is an advantage.
• Strong understanding of Japanese cultural traditions, cuisine, and hospitality.
