Kitchen Operation
• Prepration of ingredients and food;
• Establish all a la carte menus in the Fine Dining Restaurants, Rooftop Bar, Banquet kit menus, Catering catalogues content & analyses the production costing for each;
• Establish of all food store items with par level stock, inventory & production control;
• Co-operate with Accounting Division to set up & reconciliate food cost for the kitchen;
• Co-elaborate with Accounting Division & Owner in regard of F&B budgets;
• Fully in charge of kitchen operation versus F&B service for all F&B outlets;
• Supervises the different sections of the kitchen: production of hot and cold dishes, patisserie, decoration;
• Checks the presentation, quality and temperature of dishes.
Management & trainings
• Develops team spirit and motivation by creating a good working atmosphere;
• Runs basic and advanced training for team members;
• Prepares the training plan ;
• Takes part in scheduling and staffing;
• Propose entire outline & procedure of kitchen training program including identify the trainer & training phases, setting target of date & areas for commencement of training;
• Train kitchen brigade up to the level of brand standard;
• Execute the kitchen brigade including stewarding team;
• Develop & prepare guideline for hiring kitchen staffs (if any).
Following regulations
• Respects the recipes;
• Check and ensure the quantity and quality of ingredients;
• Ensures that the equipment and appliances are used correctly;
• Checks that employees' uniforms are clean and in good condition.
Other tasks
• Hygiene management in the kitchen;
• Complete of kitchen operational procedures.
Yêu Cầu Công Việc
• Level of Education: Bachelor/ Diploma/License
• Professional experiences: Minimum 3 years’ experience and at least 1 year experience in a similar role, preferably including 4 star or fine dining experience.
• Languages essential: French, English (advanced)
Others:
• Problem solving and complaints handling skills;
• Basic Food & Beverage Service Knowledge & Basic Food Hygiene Trained;
• Able to lead a team Be a team motivator and able to create a great team atmosphere;
• High attention to details;
• High energy and positive can-do attitude;
• Happy, friendly and helpful attitude towards fellow team members and guests;
• Ability to work varying shifts including weekends and public holidays;
• High level of physical fitness;
• Time management and work efficiently;
• Software skills: Excel, Word.
